Schezwan Sauce Recipe Ingredients:

  • Red Chilies – 1 cup (20 dry chilies)
  • Shallots – ¼ cup (1 small sized)
  • Minced Shallot – 1 tbsp.
  • Spring Onions – ½ cup
  • Peppers – 3 to 4 Sichuan peppers
  • Celery – ½ tbsp.
  • Sugar – 2 tsp.
  • Mint Leaves – 1 tbsp.
  • Garlic Cloves – 10 cloves.
  • Ginger – 1 inch
  • Lime Juice – 2 tsp.
  • Cumin Powder – ¼ tsp.
  • Red Chili Powder – ¼ tsp.
  • Black Pepper – less than ½ tsp.
  • Soy Sauce – ½ tsp.
  • Tomato Sauce – 2 tbsp.
  • Vegetable Oil – 3 tbsp. (use saffola oil)
  • Vinegar – 1 tbsp.
  • Water – 2 cups
  • Sugar – 2 tsp.
  • Salt – as per taste

Note: You can use highly hot, less or medium hot chilies as per your palates prefer. You can also combine different types of chilies. You can use ketchup or tomato puree in place of tomato sauce.

Schezwan Sauce Recipe Steps:

Pre-Preparation:

  • Deseed the red hot chilies
  • Rinse these chilies and soak in 2 1/2 cups of warm water for half an hour.
  • Drain the extra water from them and remove their stem.
  • Break the chilies and slice chop.
  • Now, transfer these chopped chilies into the mixer-grinder and blend till it forms the smooth paste.
  • Add water and blend till it forms a paste with no lumps.
  • Keep this paste in a bowl aside.
  • Finely chop the shallots, garlic cloves, ginger and celery leaves.
  • Crush the peppers to the powder form in the mortal-pestle.

Note: Do not soak chilies for more than 30 minutes.

Preparation:

  • Heat the vegetable in a hard anodised saucepan till it crackles.
  • Saute the chopped garlic cloves and grated ginger.
  • Cook till they have released the strong aroma.
  • Now add the chopped shallots and cook till becoming translucent.
  • Sautee the ingredients well and give a toss.
  • Now after some time, mix the fresh red chili paste you made.
  • Combine it well with the onions and stir the mixture evenly.
  • Then sprinkle the pepper powder that you grounded.
  • Saute them till the oil starts releasing from the paste you made.
  • Add the 1/2 cup of water and stir again.
  • Simmer the mixture for few more minutes.
  • Now sprinkle salt and pepper.
  • Drizzle soy sauce and vinegar over the mixture.
  • Season it with the chopped celery.
  • Stir and continue to cook for few more minutes.
  • Check for the taste and add what you feel is required.
  • As this point, you can add sugar as per the taste of the sauce.
  • Let it cook and then turn off the flame.
  • Wait for the sauce to cool down a bit.
  • Transfer it to the bowl and season with more celery.

And the sizzling Schezwan sauce is ready to be served!

Note: You can also suttee in the melted butter.
