Arbi Ki Sabzi Recipe : How to Make Arbi Curry at Home

Arbi is also pronounced as “arvi”. It the vegetable which is available in the market during summer. It is similar to the potato but a bit starchier than it. It can be cooked in various manners. You can boil, shallow fry, deep fry and make a different kind of gravy. This Arbi Curry Recipe is also known as Arbi ki Sabzi Recipe. It is spicy north Indian curry which is light on the stomach. Pair it with paratha and makes a complete meal. In this vegetable gravy, the arbi is chopped and cooked.

Description: This Arbi ki Sabzi Recipe is also known as Arbi Curry. It is spicy north Indian curry which is light on the stomach. It is easy and simple to make at home.

Ingredients to Make Arbi ki Sabzi Recipe:

  • Arbi – 10 pieces
  • Red Chilli Powder – ½ tsp.
  • Tomatoes – 3 units.
  • Garam Masala Powder – 1/2 tsp.
  • Green Chilli – 1 unit.
  • Ginger – ½ inch
  • Cumin Seeds (Jeera) – 1 tsp.
  • Turmeric Powder (Haldi) – 1/2 tsp.
  • Carom Seeds (Ajwain) – 1/2 tsp.
  • Oil – 2 tbsp.(use saffola oil)
  • Water – 2 cups
  • Coriander Leaves (Dhania Leaves) – few leaves
  • Salt – As per taste.

Method for Making Arbi Ki Sabzi:

  • Take tomatoes and clean them.
  • Make a paste of tomatoes, green chilli, and ginger in a pan.
  • Add cumin seeds too while making the paste (tomato gravy).
  • Keep the tomato paste aside.
  • Take arbi and wash it nicely.
  • Remove all the dirt from it.
  • Take a pressure cooker and place it on the stove.
  • Now, add water in the pressure cooker.
  • Add washed arbi in the cooker and cook it.
  • As the arbi gets cooked, remove the water and transfer them into a bowl.
  • Let them cool.
  • Now, peel the outer skin of arbi.
  • Cut the arbi in 4-5 pieces depending on their size. Cut Vertically.
  • Now, take a non-stick frying pan and add oil in it.
  • Turn on the flame and heat the oil.
  • Now, add carom seeds and fry it.
  • Add the tomato paste in it.
  • Stir it well.
  • Now, add turmeric powder, red chilli powder, Garam masala powder in it.
  • Stir the mixture once again after adding masalas.
  • Fry gravy for around 5 minutes.
  • Now, add the boiled arbi in the pan and sauté.
  • Add salt and taste the arbi ki sabzi.
  • Adjust the salt and spices if required.
  • Let the arbi cook.
  • Simmer it for 5 minutes
  • As the arbi ki sabzi gets ready, transfer it into the serving bowl.
  • Serve the arbi curry hot.

The gravy is tangy tomato based which is seasoned with various Indian spices. The combination of spice powders with the arbi make a finger-licking gravy. It is a treat for the people with the spicy taste buds. This arbi curry recipe is a very simple dish to make. Even if you are trying your hand on this curry for first the time, don’t be hesitant. Remarks:

  • While boiling arbi in cooker, use fork and check if the arbi is properly cooked or not.
  • Make a smooth tomato paste. Jeera is optional in it. You can use Jeera in making the sabzi.
  • Use Saffola oil when cooking.
  • If you are shallow frying then roll the arbi in rava to give nice crispy texture.
  • If you do not have arbi, you can prepare the same masala gravy with the potatoes.

Serving & Garnishing:

  • Sprinkle coriander leaves over the arbi curry.
  • Eat with Jowar roti or any kind of paratha.
