Atte Ka Halwa Recipe : Wheat Flour Pudding!

Atte ka halwa is a famous North Indian sweet dish. The festival of Navratri is coming so thought of sharing this recipe. Atte ka halwa recipe is very easy and quick dish to be made. It also tastes awesome. You can make this dish on some occasion or if you desire to eat something sweet.

Ingredients for Atte Ka Halwa Recipe:

  • Atta / Whole Wheat Flour – 1 ½ cups
  • Cardamom Powder – ½ tsp.
  • Chopped Dry Fruits – 1 tbsp.( optional )
  • Ghee – ⅔ cup (use patanjali cow ghee)
  • Sugar – 1 cup
  • Water – 3 cups

Note: You may use the water as required. Add the sugar in the proportion of the sweetness needed for the Halwa, it would take a ¾ cup to 1 cup sugar.

If you do not have ghee, then you may try with butter but the taste will change. Also, the traditional way of making Halwa is with ghee so butter is not recommended.

The quantity of the nuts is not fixed, you can vary according to your preference. If you like almonds more, then add more of almonds and similarly if you like cashews more, then increase the proportion of cashews.

A Method for Atte Ka Halwa Recipe:

Pre-Preparation:

  • Sieve the rough textured wheat flour and keep it aside.
  • Take the non-stick pan and heat it over a low flame.
  • Pour in 3 cups of water and add 1 cup of sugar in it.
  • Once, you have kept this on a stove over a high flame, then change the flame to medium.
  • Let the solution come to a full boil. You may change to high flame for a while and then shift it back to low or medium flame.
  • Ensure that the sugar has completely dissolved in the water.
  • Whenever the sugar mixture comes to the boil, lower the flame.
  • Continuously keep simmering this sugar syrup solution.

Note: Let the sugar mixture come to the boil, till then you start with the making of Atte Ka Halwa.

Preparation:

  • Till the time the sugar solution is prepared, keep the ghee to heat in another non-stick pan.
  • Let ghee melt over the high flame.
  • Once the ghee is melted, lower the flame and add wheat flour in the ghee.
  • Keep stirring the wheat flour in ghee continuously until you see the change of colour and a fragrant aroma starts to release of roasted wheat flour.
  • You have to stir continuously so that the flour is roasted evenly and you get even brown colour for the whole flour.
  • Meanwhile, keep checking the sugar syrup solution. Whenever the sugar solution comes to a boil switch off the stove.
  • Now roast the wheat flour until you get a proper brown colour of Halwa and start feeling the awesome aroma.
  • Whenever it cooked, you would notice that ghee will start releasing from flour.
  • This is the sign that the flour is perfectly roasted.
  • Now at this point, if after your flour is roasted, your sugar solution is not ready, then increase the flame of the stove and let it begin to form bubbles.
  • If your solution has already come to the boiling point, then again turn off the flame of sugar solution pan, let it form bubbles.
  • As soon you see the formation of bubbles, within seconds add the boiled sugar solution in the pan containing wheat flour.
  • Perform this as a simultaneous task, pour in little solution and then stir. Again add little more sugar solution and give a stir. Like this keep on adding and stirring till you add the entire solution to the wheat flour.
  • Be careful when you transfer the hot sugar solution to the wheat flour pan because the mixture will splutter.
  • Stir continuously with all your force to avoid lump formation.
  • If you keep on simmering and stirring, the Halwa will slowly become thick as it would have absorbed all the water.
  • Then sprinkle some cardamom powder and season the Halwa with the chopped dry fruits.
  • Once again stir properly and avoid lumps.
  • When you see that your Halwa has achieved the thick consistency or the semi-thick consistency, then switch off the stove.

And the delicious Atte ka Halwa is ready to eat!

Note: Always use the thick-bottomed non-stick pan for making the Halwa so that it does not get burnt from the bottom.

You have to vigorously stir the Halwa when you pour in the water in the flour otherwise, it will form lumps. If the lumps are formed, then break it with a spatula and keep pouring hot water and immediately stir.

To avoid the burning of the wheat flour, you have to roast it on the low on the medium flame. Also, roast the flour properly till is completely cooked otherwise it would become water have will have a fluid consistency which is not suitable to make Halwa.

Many people make this halwa for Prashad also. This is a healthy halwa recipe. To make it more healthy dry fruits are added. The only art in making this dish is to avoid lump formation. Another thing is proper roasting of the flour. But do keep an eye while roasting to avoid burning of the flour.

This Atte ka halwa is very good for the ladies who have just undergone a delivery. I don’t know the reason behind it but the elder ladies in a house like my grandmother use to give this halwa after delivery. I think it helps to regain the energy which a woman has lost during this process. No matter what is the reason the fact is that the new mother will love the advice because r not likes this halwa!

One more thing I will tell you that if you are making this dish then prepare extra also because the aroma of your halwa will surely attract your neighbours!

Remarks:

  • The total time of cooking required for the Atte Ka Halwa recipe is around 20-25 minutes where the preparation of sugar syrup can take 5 minutes. The rest of 20 minutes will go it roasting the flour and making the Halwa.
  • The measured proportion of ingredients makes the Halwa which can serve approximately 3 people.
  • Instead of water milk can also be used.
  • Stir continuously while adding water otherwise lumps will be formed.
  • You can also add Jaggery instead of sugar but I prefer sugar because the taste is altered by the addition of Jaggery.
  • As this is a high-calorie recipe with 156 calories per serving, you may prefer to sue Sugar-Free diet sugar.
  • Do not hesitate in using more ghee, if you use less ghee, then your Halwa will become dry in texture.

Garnishing:

Transfer this delicious Indian Sweet Atte Ka Halwa in a bowl and serve it warm. You can have this Halwa hot immediately from the pan either alone or with your complete meal of roti, sabzi, Dal and steamed rice.

Quick Tip:
  • You Halwa should not be sticky, at the end it should become one mass.
  • The lot of consistency and texture of Halwa will depend on the quality of wheat flour. So check the flour and use the coarsely grounded sieved wheat flour.
  • You can use any dry fruits or nuts of your choice.
  • If you are a diabetic patient, then adjust the quantity of sugar and ghee according to your health.
