The core element of any Punjabi dish is the paneer. Here the paneer cubes are shallow fried and tossed in the spice mix. The Achari Paneer Tikka Recipe is rich in taste and flavours. It is a wholesome meal which you can you enjoy with Roti/ Paratha or the mild flavoured chutney.

Description: In the Achari Paneer Tikka Recipe, the paneer cubes are shallow fried and tossed in the spices. It is easy Punjabi gravy dish where you marinate the paneer.

Ingredients for Achari Paneer Tikka Recipe:

  • Paneer – 250 grams
  • Onion Seeds (kalonji) – ½ tsp.
  • Pickle Gravy (achar masala) – 2 tsp.
  • Coriander seeds (dhania) – 1 tsp.
  • Curd – ¼ cup
  • Fenugreek Seeds (methi) – ¼ tsp.
  • Ginger-Garlic Paste – 1 tsp.
  • Mint leaves (pudina) – few leaves
  • Red Chilli Powder – ¼ tsp.
  • Garam Masala Powder – ¼ tsp.
  • Mustard Powder – ¼
  • Turmeric Powder (Haldi) – ¼ tsp.
  • Oil – 2 tbsp.
  • Salt – As per taste

Note: Using Hung Yogurt is preferable. You can use saffola active oil when cooking. If you do not have fresh paneer, you can make paneer at home as well.

Steps for Achari Paneer Tikka Recipe:

  • Take Fenugreek seeds and clean them.
  • Pick stones and other impurities from them. Keep it aside.
  • Do the same for Coriander seeds and Onion seeds.
  • Now, take a non-stick frypan and place it on the stove.
  • Turn on the flame and begin to add whole spices in it.
  • Add the coriander seeds (Dhania), fenugreek seeds (Methi) and onion seeds (kalonji) in it.
  • Dry roast these 3 ingredients on medium flame.
  • Roast them till fragrant.
  • As soon as they are roasted, turn off the flame and transfer them into a bowl.
  • Keep them aside so that they get cooled down.
  • Now, take a bowl and wipe it with a dry cloth.
  • Add curd in the bowl.
  • Add red chilli powder, garam masala powder, turmeric powder (Haldi) in it.
  • Also, add Mustard powder and pickle gravy in it.
  • Mix everything well.
  • Now, add ginger-garlic paste in the bowl and mix it.
  • In this mixture, add salt and mix.
  • After adding salt, take the mixture.
  • Adjust salt, red chilli powder and garam masala powder as per your taste.
  • Mix again nicely after adjusting the spices.
  • Check if the dry roasted ingredients are cool or not.
  • Once the roasted ingredients are cooled, take a mortar-pestle and clean it with a dry cloth.
  • Add the roasted ingredients in the mortar-pestle.
  • Crush them into semi-fine powder and transfer it into a small bowl.
  • Now, take a pinch of the crushed powder and add it to the curd’s bowl.
  • Mix it nicely.
  • Now, take paneer and cut it into equal cubes of 1 inch.
  • After cutting, add these paneer cubes in the curd mixture.
  • Mix them nicely so that every part of paneer cubes is coated evenly.
  • Let the paneer cubes marinate in the curd mixture for around 15-20 minutes.
  • After 15 minutes, take a pan and place it on the stove.
  • Now, add oil in the non-stick frying pan and turn on the flame.
  • String the marinated paneer cubes into satay sticks.
  • Place them in the heated pan.
  • Now, cook the paneer cubes in the pan.
  • When cooking, make sure you rotate it so that every side of the cube is cooked.
  • Keep rotating the Achari paneer tikka until properly cooked.
  • Once the Achari paneer tikka is cooked nicely, transfer it into serving plate.
  • Serve Achari Paneer Tikka hot.

The blend of Achar Masala, Garam Masala Powder, Garlic-Garlic Paste and the Red Chilli Powder will set your taste palates on your fire. But the combination of curd and toasted paneer is enjoyable. The aromatic seeds with the exotic flavoured spices make a great appetizer. The fresh Paneer, Pickle and Curd are the core elements of this dish along with some homemade spice powders. This dish is simple to make, easy to digest and hygienic.

Remarks:

  • Do not over-roast the seeds or it will spoil the taste.
  • If you do not have garam masala, you can make garam masala at home.
  • Check if the Curd is fresh. Otherwise, it will give the bitter taste.
  • You can use any pickle gravy depending on your taste. I prefer the mango mix achaar gravy.
  • You can cut paneer cubes in any shape. Triangle or cubes or rectangles, etc.
  • When cooking the Achari paneer tikka, do not forget to rotate it, or it won’t cook evenly.

Serving & Garnishing:

  • Garnish it with Mint leaves.
  • You can use fresh coriander leaves as well.
  • Serve it as it is or use any dip of your choice.
  • Kids love this as an evening snack.
