Atta Ladoo Recipe

Atta Ladoo Recipe Ingredients:

  • Wheat Flour – 2 cups
  • Cardamom Powder – ½ tsp.
  • Saffron Threads – a pinch
  • Almonds – ¼ cup
  • Walnuts – ¼ cup
  • Cashews – ¼ cup
  • Raisins – ¼ cup
  • Desiccated Coconut – ½ cup
  • Sugar – ¾ cup
  • Ghee – 2 tbsp. + ¼ cup

Note: You can add any other nuts or dry fruits. Do not use oil. You can use powdered Jaggery instead of sugar. You can also try patanjali’s cow ghee.

Atta Ladoo Recipe Steps:

Pre-Preparation:

  1. Sugar Powder:
    • Take the ¼ cup sugar in a Mixer-grinder.
    • Blend the sugar to the powder form.
    • Transfer it to a small bowl. Keep it aside.
  1. Roast Dry Fruit:
    • Roughly chop the dry fruits except for almonds.
    • Melt 1 tbsp. of ghee in a pan.
    • Fry these chopped nuts.
    • Roast till they become brown.
    • Transfer it to bowl.
    • Let them cool.
  1. Chop and roast almonds individually.
  2. Sauté the desiccated coconut.

Note: Do not roast raisins.

Preparation:

  • Take a non-stick thick bottomed pan and heat it over the low flame.
  • Add the wheat flour in the heated pan and stir it.
  • Cook the wheat flour properly till it roasts properly.
  • Keep stirring continuously so that the flour is roasted evenly.
  • Cook till the flour changes color and becomes brown.
  • If you are using desiccated coconut, then add at this time.
  • Take care that it does not burn while you are roasting.
  • When it’s cooked, you will it becomes translucent and it releases a strong nutty aroma.
  • It might take approximately 10 minutes for the wheat flour to be cooked completely.
  • Now add 1 tbsp. of ghee in the pan of the roasted wheat flour.
  • Again start to mix these ingredients very well.
  • Continuously keep stirring this mixture till it becomes roasted perfectly.
  • Check the taste of the flour after it is cooked.
  • If you do not find any rawness, this means that it is cooked.
  • Now once the wheat flour is cooked and roasted then take the pan down over the flame.
  • Switch off the flame. Let the mixture cool.
  • Now add the powdered sugar that you ground into this mixture.
  • If you find any sugar lumps, then break it because you want the mixture to be smooth and lump free.
  • Add all the chopped and roasted dry fruits into this mixture.
  • Sprinkle some cardamom powder and a pinch of the saffron thread.
  • Now when the mixture is mildly hot, in such a way that it is hot and yet you can touch it without burning your hands.
  • Grease your palm with the ghee or butter and start making small balls.
  • Take a small portion of the mixture and shape it into round balls.
  • The round circular shape small balls you made are Ladoo.
  • Take the cupcake or muffin liner, and place Ladoo in them.
  • Decorate the top of Ladoo with Raisins.

And the nutty flavored Atta Ladoo are ready for the delightful bite!

Note: Refrain from keeping the wheat mixture on flame for a long time.

To avoid lumps in the mixture of Churma Ladoo, always add ghee in the increments stages. Adding the ghee little by little does not allow the mixture to make lumps. It also helps us keep a track of the proportion of ghee we have used.
