Lauki Halwa Recipe Ingredients:

  • Lauki – 2 ½ cup
  • Full-Fat Milk – 1 cup
  • Condensed Milk – 3 tbsp.
  • Khoya – ¾ cup (crumbled)
  • Cardamom Powder – ¼ tsp.
  • Vanilla Powder – ½ tsp.
  • Cinnamon Powder – ½ tsp.
  • Green Food Color – ¼ tsp.
  • Pistachios – ½ cup
  • Cashew – ½ cup
  • Walnuts – 2 tbsp.
  • Almonds – ½ cup
  • Dates – ½ cup
  • Raisins – ½ cup
  • Sugar – 3 tbsp.
  • Butter – 1 tbsp.
  • Ghee – 2 tbsp.
  • Lemon – ¼ slice
  • Warm Water – ¼ cup

Note: Lauki is also known as Dudhi in Hindi and bottle guard in English. Apart from doodhi, few folks also know it from the name ghiya. Use carnival almods (buy it here)

Lauki Halwa Recipe Steps:

Pre-Preparation:

  1. Grate the Lauki:
    • Wash Lauki properly under the fresh water tap.
    • Rinse, clean and dry the Lauki with a kitchen cloth.
    • Peel off their skin and again wash it with water.
    • Grate the Lauki from all the sides.
    • Discard the center portion which contains seeds.
    • Squeeze the water from the grated Dudhi.
  1. Boil the condensed milk. Squeeze little lemon into milk.
  2. Blanch and peel the nuts you have. Chop into pieces.

Note: Do not throw away the water you squeezed. It is good for health.

Preparation:

  • Heat ghee or butter in a saucepan over a medium flame.
  • Add the grated and dry Dudhi to cook.
  • Sauté it for 4 minutes and stir it well to cook.
  • Now in a deep and shallow pan, combine the cooked Lauki with the boiled fresh milk and the sweet condensed milk.
  • Stir the mixture continuously till it reaches its boiling point.
  • Keep cooking on a low flame.
  • Simmer the mixture with khoya and do keep stirring at the same flame.
  • When you find that the milk has reduced, then change the knob of the flame and increase it.
  • Add the chopped dry nuts like almonds, walnuts, pistachios and cashew nuts. Also, add the raisins and dates.
  • Sprinkle the cinnamon powder, cardamom powder or the crushed cardamom into the mixture.
  • When the mixture has become dry, and the milk has been evaporated add the ghee.
  • Mix ghee evenly into the mixture and cook for few more minutes.
  • Add the sugar and vanilla powder according to the sweetness you can prefer.
  • Let the sugar melt into the mixture which will make it smooth, sweet and soft.
  • Once the mixture has become soft, add the warm water into the pan to turn Halwa a bit liquid.
  • Cook the Halwa for few more minutes.
  • Keep stirring in between to avoid it getting stuck at the bottom.
  • Add the green food color essence and stir once again.
  • When the Halwa is properly cooked, and the correct consistency has been achieved, turn off the gas.
  • Transfer the Lauki Halwa on the plate, spread it evenly.
  • Cut into the thick small cubes.

  • If your milk is not fresh or your Lauki is not ripe then when you pour the milk there are chances of milk spilling.

Simply you have to grate the Lauki and add it to the pan along with the milk. Then allow to cook for some time and keep on stirring continuously. It would take approximately 45 minutes to 1 hour for Lauki to cook with the milk if you are making it on the lower flame.

You may prepare it on the high flame or at medium flame if you want to cook fast but then there are chances that it would get burnt and it constantly needs your attention. The benefit of preparing the Lauki over the low flame is that you can allow it cook and meanwhile do other things. Also, if you are in extremely hurry and need to make this Halwa of Lauki very quickly, then you can use the microwave to prepare the Lauki Ka Halwa. Take a deep or hollow microwave safe bowl and mix everything in the bowl. Then keep the bowl in the microwave for 15 minutes and your Halwa would be ready. Just be careful about using the bowl as the frothing milk would easily spill if you use any small bowl.

In the above recipe, we have first sautéed the Lauki in ghee, then added milk or khoya with sprinkle of sugar. Though the texture and taste would be slightly different but it is still quicker than the conventional method. If you do not want to compromise with the taste of Lauki, then firstly combine milk with grated Lauki. When the milk comes to the boiling point, add the other spice powders and the nuts. After the milk has been evaporated completely, mix the ghee with the Lauki mixture and allow to cook. Finally, add the sugar and stir everything well for a minute.

The other way to prepare it using the pressure cooker and not the pan. Here there is an advantage that you do not have to keep stirring the Halwa mixture or you do not need to pay much attention while the Lauki is being cooked. You have to grate the Lauki, sauté it for a minute and mix it with the milk or Mawa and then pressure cook it for few minutes.
