Pad Kra Pao: Thai Basil Chicken Ingredients
- 1/2 cup white rice, steamed
- 4 cloves of garlic
- 2 tablespoons cooking oil
- pinch of salt
- 2 small egg
- 160 grams chicken breast
- 4 pieces bird’s eye chili
- 3 teaspoons oyster sauce
- 3 teaspoons soy sauce
- 2 teaspoons brown sugar
- 1 teaspoon white pepper
- a handful of Thai basil
- Sriracha
- Lime juice
Pad Kra Pao: Thai Basil Chicken Instructions
Step 1: Cut the chicken into cubes of half an inch, place them in a bowl and sprinkle them with salt. Leave the chicken for 1 hour in the refrigerator. Mince 1 garlic clove.
Step 2: Pound the garlic cloves in a mortar and pestle with chilis. In a bowl, combine oyster sauce, soy sauce, and brown sugar. In enough oil so that it will crisp the edges, fry the egg and ensure that the yolk of the egg is still runny. Then, put it aside.
Step 3: Sprinkle garlic with oil in a pan for the garlic saute. Add in 1 tsp of salt and 1 cup of white rice when the garlic begins to turn yellow. For 2 minutes, fry and set aside.
Step 4: Add 1 tbsp of oil in a saucepan with the minced garlic and chili paste.
Step 5: Add the breasts of the chicken and fry until the chicken is almost cooked. Add the sauce mixture to start caramelization. Turn off the heat and put some basil in it. Stir.
Step 6: Finish with a sprinkle of sriracha and lime juice to taste.
