Thai Peanut Noodles use Thai sesame noodles whisked with soy sauce, sesame oil, chilli paste, and brown sugar. The whole preparation and cooking time is only 25 minutes, and this recipe is good for four servings.

Thai Peanut Noodles Ingredients

• 2 packages / 5.6 ounce of refrigerated Yaki-Soba seasoning sauce, packets discarded
• 1 tablespoon olive oil
• 2 boneless, skinless chicken breasts, cut into 1-inch chunks
• 2 cups shredded cabbage
• 2 carrots, peeled and shredded
• 2 green onions, sliced thinly
• ¼ cup fresh cilantro leaves
• 2 tablespoons of chopped peanuts

For the sauce,

• ¼ cup peanut butter
• ¼ cup reduced-sodium soy sauce
• 3 cloves garlic, minced
• 2 tablespoons honey
• 1 tablespoon grated ginger
• 1 tablespoon rice vinegar
• 1 teaspoon sesame oil
• 1 teaspoon Sriracha

Thai Peanut Noodles Cooking Instructions

Step 1: In a bowl, whisk the peanut butter, soy sauce, garlic, honey, vinegar, sesame oil, and Sriracha.

Step 2: In a large pot of boiling water, add Yaki-Soba until loosened. Do this for about 2 minutes. After, drain well.

Step 3: Heat the olive oil in a large skillet over medium heat. Add the chicken to skillet and cook until golden brown. Do this for about 4 minutes.

Step 4: Stir in the cabbage, carrots, and green onions until heated through. Do this for about 1 minute.

Step 5: Stir in Yaki-Soba and peanut butter mixture until well-combined. Do this for about 2 minutes. 

Step 6: Serve immediately. Garnish with cilantro and peanuts.
