Classic Ratatouille Recipe

Ratatouille Recipe Ingredients:

  • Red Onions – 3 cups (finely chopped)
  • Tomatoes – Ripe, Plum – 6 cups
  • Basil/ Parsley Leaves – 1 cup (half bunch)
  • Aubergines / Eggplant – 2 cups (chopped)
  • Courgettes – 3 cups (roughly chopped)
  • Red Bell Peppers – 1 cup
  • Green Bell Peppers – 1 cup
  • Yellow Bell Peppers – 1 cup
  • Garlic Cloves – 4 pieces
  • Mushroom – ¼ cup
  • Thyme  Powder  –  ¼ cup (few sprigs)
  • Oil –  ¼ cup
  • Vinegar  – 1 tbsp.
  • Lemon Juice – ½ tsp.
  • Cheese – 1 cube (small size)
  • Black Pepper – ¼ tsp.
  • Salt  – as per taste

Note: Make adjustments in ingredients according to your suitability. You can any cheese such as Parmesan, Cottage or Parmigiano-Reggiano.

Ratatouille Recipe Steps:

Pre-Preparation:

  • Finely chop the onions, tomatoes and slice the garlic.
  • Wash the bell-peppers, deseed and chop them into thin slices.
  • Rinse and chop the Basil Leaves,trim the eggplant and Courgettes.

Note: The Recipe of classic ratatouille can also be prepared by baking. Pre-heat the oven at 350 degrees F (175 degrees C). You may also use pot instead of saucepan.

Preparation:

  • Take a non-stick saucepan and heat the oil over a medium flame till it crackles.
  • Add chopped Onions and sauté till they become translucent. Mix chopped garlic cloves and stir for 5 minutes. Fry basil leaves and thyme and wait till they are cooked and get becomes soft.
  • To this mixture, add finely sliced bell peppers. Give a toss after mixing Aubergines and Courgettes. Stir with the other veggies, the finely chopped tomatoes. Sprinkle salt and pepper and the season the mixture evenly.
  • Mash the tomatoes with the backside of spoon. Cover the pan and let it cook for 40 minutes. The final gravy prepared should be sticky and sweet. Lastly add the grated basil leaves and lemon juice.
