Dahi Bhindi Recipe : Creamy Curd Curry of Okra!

Dahi bhindi Recipe makes a dish in which stir fried bhindi is cooked in a mildly spiced gravy made up of curd and gram flour. This dish can be served both during lunch or dinner. It goes very well with roti, naan, paratha, steamed rice or jeera rice.

Always remember while making an okra dish that they are completely dry because if wet bhindi is used it will become sticky. So just get the ingredients and be ready to cook this yummy and delicious bhindi masala gravy in your kitchen.

Ingredients for Dahi Bhindi Recipe:

  • Bhindi/ okra/ ladies finger – 250 gm
  • Onion finely chopped – 1 ( medium size )
  • Curd/ yogurt – 1 cup
  • Gram flour/ besan – 1 tsp
  • Cumin seeds/ jeera – ½ tsp
  • Mustard seeds/ rai – ¼ tsp
  • Coriander powder/ dhania powder – 1 tsp
  • Dry red chili – 1 piece
  • Curry leaves – 4-5 leaves
  • Turmeric powder/ haldi – ¼ tsp
  • Red chili powder – ½ tsp
  • Salt to taste
  • Oil – 3 tbsp
  • Water – ½ cup
  • Green coriander leaves.

Method for Dahi Bhindi Recipe:

  • Wash the bhindi properly. And let it dry by spreading on a cloth. You can even wipe it with a cloth when you are in a hurry.
  • Cut it in 1.5-2 inch pieces.
  • Now take 2 tbsp oil in a pan. Heat the oil.
  • Now add the bhindi in it. Saute them.
  • While sauteing keep stirring the okras in between.
  • Fry until the bhindi is almost cooked and it will shrink and the sides will become slightly golden brown.
  • Remove in a plate and keep aside.
  • Beat curd, gram flour and water in a bowl until smooth and keep it aside.
  • Now heat 1 tbsp of oil in the same pan in which we fried bhindi.
  • Keep the flame medium. Now add mustard seeds and cumin seeds. Let them crackle.
  • Now add dry red chili broken into two parts and curry leaves.
  • Also add chopped onion. Fry until raw smell leaves and onion turns out 6 light brown.
  • Add the beaten curd, gram flour mixture which we prepared earlier.
  • Also add turmeric powder, red chili powder, coriander powder and salt.
  • Mix well everything.
  • Cook the gravy on low flame for 2 minutes.
  • Now add the fried bhindi and mix properly.
  • Cook for 4-5 minutes.
  • Switch off the flame.
  • Delicious Dahi bhindi is ready.

Remarks:

  • Total time of cooking is 25 minutes
  • Serves 3 people.
  • Ginger garlic paste can also be added. It’s optional.
  • A pinch of sugar can be added to balance the tangines of curd.
  • After adding bhindi in the gravy don’t cook for longer time otherwise the bhindi will get mushy because we have already fried it.
  • Curd has to be fresh.
  • While cutting the bhindi keep cleaning the knife with a cloth because it will avoid more stickiness.
