Carrot Burfi Recipe

Carrot Burfi Recipe Ingredients:

  • Grated Carrots – 4 cups
  • Milk Powder – 1 cup
  • Cardamom Powder – ½ tbsp.
  • Sugar – ½ cup
  • Pistachios – 2 cups (sliced)
  • Cashews– 2 tbsp.
  • Almonds – ½ cup
  • Raisins – ½ cup
  • Saffron Strands – ¼ cup
  • Red Food Color Essence – ¼ tsp.
  • Ghee – 2 tbsp.

Note: You can use almond powder as an alternative to milk powder. For those who cannot digest milk powder, it is recommended to substitute it with the almond meal.  Always use the juicy carrots as it would be easy to cook and the mix the milk powder. You can buy patanjali ghee from here.

If you do not have carrots, then you can try to make the Beetroot Burfi from the Beetroot which is similar to making Beetroot Halwa at home.

You can make the Barfi in the butter as well instead of ghee but the use of unsalted butter with change the taste. Also, you may prefer coconut oil over the ghee (clarified butter).

It is advised to use the granulated sugar but there is no problem if you use the powdered sugar.

Carrot Burfi Recipe Steps:

Pre-Preparation:

  • Grate the carrots: Wash and rinse the carrots. Peel off their zest and finely grate them. Chop and blend.
  • Take the pan or tray or plate, grease with ½ tsp. of ghee or oil and keep it aside.
  • Roast Almonds: In a pan, melt ghee and sauté the almonds.

Note: You can also use molding bowls. You have to use a very fine grater if you want the correct consistency of your carrot Burfi.

Preparation:

  • Take the thick-bottomed frying pan, heat the ghee over the medium flame. Let it melt.
  • When the ghee melts and spread over the pan, add the grated carrots.
  • Stir and Sauté the carrots till they become tender and are completely cooked.
  • When the carrots are done, add the milk powder to the pan and stir well.
  • Sprinkle sugar and cardamom powder over the mixture into the pan.
  • Mix till the sugar dissolves and the mixtures loosens. It will take 10 minutes.
  • Add the food coloring essence to give a dark red texture.
  • Reduce the mixture. Let the mixture get thicken. Turn off the flame and transfer to the pan with the help of a spoon.
  • Gently press with the backside of a spoon to smoothen the top portion.
  • Sprinkle roasted almonds, pistachios and other dry fruits over the mixture.
  • Cover the Barfi and allow it to get the room temperature.
  • When it attains normal temperature, keep in the fridge to cool for some time.

And the candied carrot Barfi are ready to be sliced and served!

Note: Cook the carrot Burfi throughout on the medium flame otherwise you would not be able to get the required consistency.  To test whether the mixture is correct, take small piece and roll into small ball. If it forms the ball easily, then it is perfect.

Remarks:

  • The use of dry fruits in the making of Carrot Burfi Recipe is optional. You can include other dry fruits apart from mentioned or you may skip adding any.

  • If you find it difficult to mix the milk powder then you can take the ¼ glass of milk, add the powder in it and then pour in the carrot Burfi.
  • Do not add water while you are sautéing the carrots as they have their own moisture.
  • If you want to make it for a little baby, then use the baby milk powder.
  • You may use heavy cream if you are using the milk to make the carrot Burfi.
  • To give the dark red color, you can add a pinch of Red Food Color.
