Eggless Vanilla Cake Recipe

Eggless Vanilla Cake Recipe Ingredients:

  • Condensed Milk – 300 ml
  • Granulated Sugar – 2 tbsp
  • Cake Flour – ½ cup
  • All Purpose Flour / Maida – 2 ½ cup
  • Yogurt – 4 tbsp.
  • Baking Powder – 2 tsp.
  • Baking Soda – 1 tsp.
  • Vanilla Extract – 2 tsp.
  • Melted Butter – ½ cup
  • White Vinegar – 1 tbsp.
  • Water – 2 cup
  • Lime Juice – 1 tbsp.
  • Salt – ¼ tsp.
  • Corn Starch – ¼ tsp.
  • Vegetable Oil – ¾ cup

Note: You can also use Apple Cider Vinegar.

Eggless Vanilla Cake Recipe Steps:

Pre-Preparation:

  • Pre-heat oven to 180 degree C or 350 degrees F for 20 minutes.
  • Strawberry Jam Topping:
    • Boil the water.
    • Heat the strawberry jam in the water for 2 minutes.
    • Add corn starch to bind the mixture and make it thick.
    • Let the mixture cool and transfer it to a bowl.
  • Flour Mixture:
    • Sift the cake flour and all purposed flour in a large mixing bowl.
    • Sieve the baking powder in the same bowl.
    • Mix the strained ingredients properly and also add salt as per the taste.
    • Set this bowl aside for some time for ingredients to rest.
  • Froth Yogurt:
    • Take the yogurt in a bowl.
    • Add the 1 cup of water to the yogurt and make it thin.
    • Whisk the yogurt with condensed milk and water mixture.
    • Get the consistency.
    • Drizzle the white vinegar over the mixture.
    • Squeeze in the lime juice and stir well.
    • Now mix baking soda and again whisk.
    • Keep this bowl aside.
  • Cream Mixture:
    • You have a whip attachment, then fix it with another bowl of stand mixture fitted.
    • Mix the sugar with the melted butter.
    • Beat the mixture of milk and butter till it becomes creamy.
    • Add the sugar along with few drops of oil and the 1 cup of water.
    • Whip at a medium speed and also scrape the sides.
    • Do this for 5-7 minutes till the mixture achieve light texture and becomes airy.
    • Continuously whip the mixture till it become smooth.
    • Once done, keep this aside.

Note:  If you have frozen butter, then melt it on stove or microwave before using.

Preparation:

  • Now take the bowl of the flour mixture and pour in it the froth yogurt and melted butter-sugar cream mixture.
  • Add the vanilla extract to this bowl of cake batter.
  • Fold the mixture evenly and make sure to not form lumps.
  • The cake batter must be smooth.
  • Stir the mixture well so that dry ingredients mix well with the wet ingredients.
  • Gradually mix these ingredients.
  • Mix well, fold the two sets of ingredients properly.
  • Now, take the baking cake pan and butter and grease the cake pan.
  • Pour the batter over the cake pan evenly.
  • Scrape the batter from the sides with the spatula and add to cake pan.
  • Tap the sides of the cake pan, so that the air bubbles are released. Shake with strong and firm hands.
  • Bake the cake inside oven until the surface becomes fluffy and lightly brown. It should bounce back when pinched with a toothpick.
  • Remove the cake from the baking oven and keep the tray of cake pans over the wire rack and allow them to cool completely.
  • Once the cake is cooled, with the help of a knife, trim the uneven top upper layer of the cake to make it look even.
  • Drizzle the strawberry icing evenly over the cake surface.

Note: You can also line up the parchment paper on the baking tray and then apply butter.
