Fried Mix Vegetable Recipe - Mix Vegetable Sabji

Ingredients for Fried Mix Vegetable Recipe:

  • Cauliflower Florets – 1/3 cup
  • Capsicum (chopped) – 1/3 cup
  • Peas – ¼ cup
  • Paneer – 1/3 cup
  • Carrot (chopped) – 1/3 cup
  • Potatoes (chopped) – ½ cup
  • French Beans (chopped) – 10 units
  • Onions (finely chopped) – 1/3 cup
  • Tomatoes (finely chopped) – ½ cup
  • Ginger-Garlic paste – 1 tsp.
  • Cashew Nuts – 10 pieces
  • Green Chillies (chopped) – 2 units
  • Asafoetida (Hing) – 1 pinch
  • Curd – 2 tbsp.
  • Water – ½ cup
  • Red Chilli Powder – ½ tsp.
  • Coriander Powder – 1 tsp.
  • Turmeric Powder (Haldi) – ¼ tsp.
  • Garam Masala Powder – ½ tsp.
  • Cream – 3 tbsp.
  • Oil – 4 tbsp. (use saffola oil)
  • Coriander Leaves (chopped) – 1 tsp.
  • Salt – As Required

Note: You can use either green or yellow capsicum or you can completely skip them. You can add any vegetable of your choice. You can also increase or decrease quantity of any of the vegetables. Adding paneer is also your choice. You may use fresh or frozen peas.

Method of Making Fried Mix Vegetable:

  • Take all the veggies and wash them nicely.
  • Take potatoes and peel them.
  • Now, chop them into small cubes.
  • Take cauliflower and chop them to medium sized florets.
  • Collect all the veggies in one bowl and keep them aside.
  • Take a non-stick kadai and place it on the stove.
  • Now, add oil in the kadai and heat it.
  • As the oil become hot, add the chopped mix vegetable in the kadai.
  • Sauté them and cook them nicely.
  • When the veggies are cooked, transfer them into a plate and remove excess oil from them.
  • In the same kadai with oil, add chopped green chillies and cashew nuts.
  • Fry them until they become golden.
  • As they are cooked, take them in a plate and remove oil from them as well.
  • Now, in the same kadai, add asafoetida (hing) and onions.
  • Stir them until the colour of onion turns to golden brownish.
  • Now, add ginger-garlic paste into it and mix it.
  • Add tomatoes in the kadai and sauté.
  • Sauté until tomatoes are properly cooked. They will become soft.
  • Now, in this gravy, add red chilli powder, turmeric powder, garam masala powder and coriander powder.
  • Mix them nicely.
  • Now, add curd in the kadai and mix it. Keep stirring until everything is mixed properly.
  • Add water and cream in the kadai and stir it well.
  • Keep them flame medium and let the gravy simmer.
  • Now, add mix vegetables in the kadai and mix.
  • Add fried cashews and chillies in the sabzi and mix them.
  • Now, if you want you can add paneer cubes at this stage or you can skip them.
  • Mix everything properly and let it cook for 2 minutes.
  • After 2 minutes, add salt to the kadai and mix.
  • Taste the fried mix vegetable curry and adjust the spices.
  • Once cooked, transfer the fried mix vegetable curry in a plate.
  • Serve it Hot.
