Masala Pav Recipe

Ingredients for Masala Pav Recipe:

  • Onion (finely chopped) – ½ cup
  • Tomatoes (finely chopped) – 1 cup
  • Capsicum (finely chopped) – ½ cup
  • Garlic – 4 pieces
  • Ginger – ½ inch
  • Green Chillies – 2 units
  • Cumin Seeds (Jeera) – ½ tsp.
  • Turmeric Powder (Haldi) – ¼ Tsp.
  • Red Chilli Powder – ½ tsp.
  • Pav Bhaji Masala – 4 tbsp.
  • Garam Masala Powder – ¼ tsp.
  • Water – as required
  • Salt – as required
  • Pav – 3 to 4 small Pav slices
  • Butter :
    • For the masala paste – 3 tbsp.
    • For roasting the Pav – 1 tbsp.

Note: If you are in hurry, then buy the butter from the store or else make the salted butter at home. You can use more Pav depending on the size of the homemade Pav or the bakery bought Buns.

Steps for the Masala Pav Recipe:

It is simple and easy to prepare the Masala Pav at home. First, you need to make the mixture and then spread it between the roasted Pav.

Pre-Preparation for Masala Pav:

Ginger-Garlic-Green Chilli Paste:

  • Wash ginger, garlic and green chillies.
  • Clean, deseed and chop the green chillies.
  • Take a mortar-pestle or mixer-grinder.
  • Wash it and clean it using a dry cloth.
  • Add the ½ inch crushed ginger.
  • Then add the grated garlic.
  • Also, add the green chillies.
  • Crush them into a smooth paste.
  • Transfer this paste to a small bowl
  • Keep this ginger garlic green chilli paste aside.

Chop the Veggies:

  • Take tomatoes and wash them nicely
  • Finely chop them and keep them aside.
  • Do the same for capsicum and onions.
  • Take the bell peppers and wash them properly.
  • Remove their crown and chop them into cubes.
  • Wash the onions thoroughly and peel their skin.
  • Then finely chop onions into very fine pieces.

Prepare the Pav:

  • Make the Pav dough.
  • Knead the Pav dough.
  • Let it settle and double.
  • Shape the small balls.
  • Keep the Pav to bake.
  • Let it cool for a while.
  • Take the baked Pav.
  • Slice them into halves.
  • Keep them aside.

How to Make Masala Pav:

Make Masala Mixture:

  • Now, take a non-stick tava and place it over a stove.
  • Switch on the flame and add 2 tbsp. butter on it.
  • Wait for the pan to heat and let the butter melt.
  • Now, add cumin seeds (Jeera).
  • Let them crackle or splutter.
  • After that, add the paste you prepared.
  • Sauté ginger-garlic and green chili paste.
  • Let the paste cook for a while on low flame.
  • After a while, raw aroma must not be there.
  • After 30 seconds, add chopped onions and sauté.
  • Let onion turn translucent and its edges get golden.
  • Now, add the chopped tomatoes to this pan and sauté.
  • Cook them for 3 minutes or until tomatoes become soft.
  • Then, add all the spices powders you are using.
  • Add the turmeric powder, red chilli powder and Pav Bhaji masala.
  • Mix all these spice powder nicely with the onion-tomato mixture.
  • Now, add the chopped capsicum and cook them for a while.
  • After 2 minutes, add salt in the masala pav’s mixture and mix it.
  • Taste the mixture and adjust the salt and other spices.
  • If you are using the Garam masala powder, then add it as well.
  • You can add ¼ tsp. Garam masala powder as well. This is optional.
  • Mix everything in the pan very well so that spices blend together.
  • Add water as required. (I added little less than ½ cup of water.)
  • Mix the water and let this mixture cook on low flame for next 2 minutes.
  • Simmer the mixture on the low flame and let the water get into the gravy.
  • Once the masala Pav mixture is ready, it looks like a thick paste.
  • Once the masala is ready, transfer it from the pan into a bowl.
  • Now proceed further to follow steps of making the masala Pav.

Note: The water makes the tomatoes soft and tender. If you see there is still too much water content in it, you can cook it again for 1 minute and let the water burn.

Roast the Masala Pav:

  • On the same tava, add 1 tbsp. butter for making the pav.
  • Now, place the sliced pav over the melting butter.
  • Toast the Pav properly over the heated pan from one side.
  • As once side is toasted, flip the pav and toast it another side.
  • Do not make the Pav too crispy or too hard.
  • Once the Pav is ready, transfer them to serving plate.
  • With the help of spoon or spatula, apply the masala on the sliced side.
  • Add some chopped onions from the above if you want to.
  • Now, again cover the pav as it was before slicing.
  • Make sure that the masala should be in the middle.
  • Do the same process for rest of the sliced Pav.
  • Roast the Pav or bun in the butter and stuff it with the masala.
  • Serve the spicy masala Pav with the delicious Bhaji.
