Beetroot Rice Recipe

Ingredients Required for Beetroot Rice Recipe:

  • Basmati Rice – 2 cups
  • Bay Leaf – 1 small sized leaf
  • Beetroot – 1 medium sized
  • Cloves – 6 pieces of cloves
  • Cinnamon Stick – 1 inch
  • Cumin / Jeera – ½ tsp.
  • Ginger Garlic Paste – 1 ½ tsp.
  • Green Chilies (slit cut) – 2 green chilies
  • Green Peas – ½ cup (few fresh or frozen peas)
  • Potato – ½ cup (1 medium sized)
  • Pudina / Mint – ¼ cup
  • Oil – 2 tbsp.
  • Onion (chopped) – ½ cup (1 medium sized)
  • Salt – as required
  • Strand of mace – 1 strand
  • Star Anise – 1 small sized
  • Turmeric Powder – 1/8 tsp.
  • Water – 3 ½ cups

Note: It is preferred to use Patanjali Basmati Rice but you can any other rice too. If you have regular rice then you may use that as well. For the best results, use the rice which is fragrant and has short grains. You can use coriander leaves or parsley leaves as well. If you want the beetroot rice to be spicier, then add ¼ tsp. of red chili powder. You saffola oil when cooking.

Method for Making Beetroot Rice Recipe:

Pre-Preparation:

  • Soak Rice: Take the packet of rice and transfer the rice to a small sized colander. Rinse the 2 cups of basmati rice under running water and wash them properly. Once you have cleaned the rice, drain the dirty water. Then soak the rice in 3 ½ cups of water for about 30-35 minutes and keep them aside. After 30 minutes, take the rice to another bowl and drain off the excess water.
  • Ginger-Garlic Paste: It is very easy to prepare the paste of ginger and garlic. Wash and dry these two ingredients. Peel the skin of ginger and garlic cloves, transfer to the grinder. Make a smooth paste without the addition of water. Drizzle some oil and stir.
  • Chop Veggies: Now take 1 medium sized beetroot, clean it and chop small pieces of about 1 cup of beetroot. Then take the onions, potatoes, green chilies and all other vegetables you are using. Rinse them, clean them and finely chop them. Keep these chopped vegetables aside in different small bowls.

Note: If you are using the frozen peas, then thaw them before adding to the pan. It is very important to soak the rice properly. Also, you may even grate the beetroots.

Preparation:

  • Take a fry pan and keep oil to heat in it over medium flame.
  • Once the oil is enough heated and starts to crackle, add the chopped onions in the pan.
  • Sauté the onions for a while and then add the chopped green chillies along with the ginger garlic paste.
  • Fry these ingredients till onions turns brownish and becomes translucent.
  • When the onions starts to release the pungent aroma, add the whole spices like cloves, bay leaf, cinnamon stick and Jeera seeds.
  • Sprinkle some freshly chopped mint leaves and cook the mixture.
  • Then mix in the star anise along with the strand of mace and give a stir.
  • Once the spices are cooked, then add the chopped potatoes, green peas and all the small ingredients.
  • Fry everything for 1 minute and then add the chopped beetroots.
  • Now pour some water into the pan.
  • Sprinkle turmeric powder, season with salt and mix everything well.
  • As water begins to boil add the soaked rice and cook until everything gets properly cooked.
  • Wait for the water to evaporate and then cover the pan and cook for few minutes until it’s done.

And the delicious Beetroot Rice is ready. Serve it HOT!

Note: When you add the spices in the pan, do not keep the flame low otherwise the spices would burn. Add water in the last according to the quality of your rice.

  • Add the ½ tsp. of fresh lime juice in the rice for the extra tanginess.
