Chawal Ki Kheer Recipe : Delicious Indian Rice Pudding!

This Chawal Ki Kheer Recipe is easy to make at home and requires only few handful of ingredients. It is one of the favorite Indian desserts which is made with an addition of rice, chopped nuts, sugar and saffron strands in the boiled milk. Chawal ki Kheer Recipe

Ingredients for Chawal Ki Kheer Recipe:

  • Basmati rice – ¼ cup
  • Milk ( full fat ) – 2 ½ cups
  • Sugar – ¼ cup
  • Chopped almonds – ½ tbsp. (use carnival almonds)
  • Chopped cashews – ½ tbsp.
  • Raisins – ½ tbsp.
  • Cardamom powder – ½ tsp.
  • Saffron strands – few strands

Note: You can use approximately 1 liter of the milk. You can use any rice with the long grains. You buy saffron strands online.(click here to buy saffron online)

If you do not have cardamom powder then take around 6 to 7 cardamom seeds and crush them to powder in the mortar pestle.

It is recommended to use the blanched almonds. You can slice chop them. Also, use the golden currant raisins for this rice kheer.

Method for Chawal Ki Kheer Recipe:

It is easy to make the Chawal Ki Kheer at home. Follow the recipe, soak the rice and start to cook the rice.

Pre-Preparation:

  • Take the rice in a strainer or colander and wash it under the running water.
  • Clean the rice properly till the rice water becomes starch free.
  • Transfer this rice to the medium sized bowl and soak the rice for 20-25 minutes.
  • Take a microwave safe bowl and soak the almonds in it having enough water.
  • Keep the almonds in the microwave for about 5 minutes.
  • Take this bowl out of the microwave, let the almonds come to room temperature. When they have cooled, peel off their skin and slice them into small pieces.
  • Also, finely chop all the nuts you are using and keep it aside in a small bowl.

Note: Do not soak the rice for more than 30 minutes.

Preparation:

  • Take a thick bottomed pan. Pour in the 2 ½ cup of milk in it and let it come to boil on medium flame.
  • Keep the flame low now onward.
  • Till the time, milk comes to the boiling point, you can drain the water from the rice and keep it.
  • Once the milk boils, then lower the flame and add the soaked rice to the pan.
  • Mix the rice properly with the milk in a way that no lumps are formed.
  • Now continuously you have to simmer the milk on low flame for 25-30 minutes till the grains of rice are cooked evenly.
  • Do keep on stirring at regular intervals otherwise, the kheer will burn.
  • Keep giving a gentle stir in every 4-5 minutes. Keeping scraping the rice from the edges of the pan as well so that it does not stick there.
  • Whenever you scrape the edges of the pan, remove the dried milk which sticks to the edges and add it again back to the pan.
  • After 20 minutes of the cooking, the rice adds saffron strands into the pan.
  • Keep on simmering on low flame and stirring at intervals.
  • After 5 minutes, sprinkle the sugar and mix the chopped nuts. Stir well so that everything mixes evenly.
  • Sprinkle the cardamom powder over the rice kheer and give a gentle stir.
  • Till now the milk will be thickened and rice will be cooked.
  • After some time the kheer will be ready.
  • In order to check the right consistency take a ladleful of kheer and pour it down, the rice and milk should fall together.
  • Once you get the right consistency switch off the stove.

And the sweet Kheer is ready to eat!

Note: It would nearly take 35 to 40 minutes for the rice to cook really well in the milk. The more nicely you allow the rice to mix, the better will be your kheer with the thick consistency.  If you want to reduce the consistency of your rice kheer then you can try adding some hot milk.

If you kheer is overcooked or if there is an inappropriate proportion of milk and rice then it would become thick and lumpy. In this case, the volume will reduce and you would feel the strong taste of the flavoring agent like cardamom powder. To avoid the formation of lumps, pour in more boiled milk in the pan and try to dissolve the thick lumps.

If you over boiled the milk then simply pour in some extra boiled milk to the kheer. This will help in making the thin consistency of kheer.

The latter one is less time consuming as with the uncooked rice you have to soak the rice for minimum half an hour. Any which way you make this Kheer, with the correct proportion of ingredients and right consistency of kheer, it would make a very flavorful and fantastic sweet dish.

  • Total time of cooking required for the Chawal ki Kheer Recipe is approximately 1 hour where 30 minutes can go in preparation and rest 30 minutes is cooking.
  • The measured proportion of ingredients for recipe makes kheer which can serve 2 people. You can increase or decrease the measurement of each ingredient based on the number of serving.
  • It is advised to keep the flame low during the whole process otherwise, the kheer will burn.
  • You will have to continuously keep on stirring otherwise rice will stick to the bottom of the pan.
  • You can add any other nuts or dry fruits of your choice.
  • The addition of saffron strands is also optional. They give the color and fragrance to the rice kheer.
  • In any case, if your kheer burns then immediately shift it to other vessel and do not scrape the burnt part from the bottom.

Quick Tip:
  • You can add few drops of rose water at the end of this kheer which takes its taste and flavor to another level.
  • If you do not want to use sugar, then you can add Jaggery but be careful that it should be hot when you add it. Your milk can curdle if it’s hot and you are mixing the hot Jaggery at the same time.
  • For the bit of spicy taste, you can sprinkle ¼ of black powder over the kheer.
  • If you love chocolate, then add in the cocoa powder and make it the Chocolate Kheer!
  • Your kheer will become nice if you use broken rice.

There are various names to this sweet and tasty dessert. It is known as rice kheer in north India, payasam in south India and in the western it is called as rice pudding. You can serve it as sweet or in the dessert. There is no specific compulsion about the flavoring agents, the rice is the core ingredient which is mixed with the milk. Meanwhile, mix some condensed milk with the full fat boiled milk, simmer the milk until you get the correct sweetness level. If you find sweeter then add some more milk and if you are unable to get the right proportion of sweetness, then add more of condensed milk. When the milk is boiled, mix the cooked rice and add the nuts. Sprinkle cardamom powder and season with sugar. Lastly, give a gentle stir to the Kheer and its ready to eat in less than 30 minutes. Though it’s made fast and quickly, you would feel the difference of taste and flavors due to the presence of the condensed milk. There is a typical characteristic sweetness of condensed milk which is instantly felt especially when you are sensitive to taste.

There is one more way to make this Chawal ki Kheer Recipe which uses the leftover rice. If you have made rice for your lunch in the morning then you can use the same rice in the evening by making this delicious kheer. In this way of preparing kheer when you are using the already cooked rice, you simply have to boil the milk and then add the rice along with other flavoring agents like cardamom powder and cinnamon powder to the pan. Stir well for few minutes, then add the sugar. You can add a pinch of salt if you want. Keep stirring and simmer the milk till you achiever the required consistency. Serve it hot or cold in the form of pudding. It is always better to use the rice than to throw it away.
