Idli fry recipe is a quick snack made up of left over idlis. Here idlis are cut into finger chips and then fried. Thanks some masala like pav bhaji masala or  chaat masala or idli podi is sprinkled on it. Sprinkle the masala of your choice.

Idli Fry Recipe

Ingredients for Idli Fry Recipe:

  • Leftover idli – 5-6 idlis.
  • Chaat masala – 1 tsp
  • Pav bhaji masala – 1 tsp
  • Salt to taste
  • Oil for deep frying or shallow frying.
  • Idli podi – 1 tsp ( optional )

Method for Idli Fry Recipe:

  • Cut the idlis longitudinally. The idli has to be refrigerated or a day old.
  • Heat oil in a wok or kadhai. Heat untill medium hot.
  • Put the idlis in the oil and fry until golden.
  • Ideally the idli should be crisp from outside and soft from inside.
  • You can fry more if you like more crispy texture.
  • Remove the small parts first as they get crisp earlier.
  • Remove the fried idlis on a kitchen napkin to remove excess oil.
  • You can even shallow fry the idlis.
  • Sprinkle some red chili powder or chaat masala or pav bhaji masala or idli podi.
  • Sprinkle some salt also.
  • You can even mix two masala and sprinkle on it.
  • Idli fry is ready to eat.

It is important that the idlis are refrigerated or a day old. Because if fresh idli is fried it will break in the oil. Even they will absorb more oil. Fresh idlis even stick to each other while frying.

It is always better to refrigerate the idlis for few hours before frying so that they do not break while frying. If you don’t want to deep fry the idlis then they can be shallow fried also.

While frying the idlis remove small pieces first because they get fried earlier.

Garnishing:

  • Garnish with some finely chopped green coriander leaves.
  • Serve with nariyal chutney or sambar or ketchup.

Remarks

  • Total time of cooking is 15 minutes.
  • Serves 3 people.
  • While frying the idlis keep an eye because if they are fried more they will become much crispy.
  • Shallow frying can also be done.
  • It’s important that the idlis are refrigerated.
