Eggless Fruit Cake Recipe Ingredients:

  • Condensed Milk – ½ can
  • Granulated Sugar – ¾ cup
  • Corn Starch – ¼ tsp.
  • Cake Flour – ¾ cup
  • All Purpose Flour / Maida – 1 ½ cup
  • Yogurt – ½ cup
  • Baking Powder – ½ tsp.
  • Baking Soda – 1 tsp.
  • Raisins – ½ cup
  • Strawberries – ¼ cup
  • Cranberries – ¼ cup
  • Black Currants – ¼ cup
  • Apricots – ¼ cup (8 pieces)
  • Walnuts – ¼ cup
  • Pistachios – ¼ cup
  • Almonds – ¼ cup (use carnival almonds)
  • Cashew nuts – ½ cup
  • Hazelnuts – ¼ cup
  • Dates – ¼ cup
  • Pecans – ¼ cup
  • Cherries – ¼ cup
  • Vanilla Extract – 1 tsp.
  • Melted Butter – ¼ cup
  • White Vinegar – 1 tbsp.
  • Orange Zest – ¼ tsp.
  • Apple Juice – 1 tbsp.
  • Orange Juice – 1 tbsp.
  • Lime Juice – 1 tbsp.
  • Ginger – ¾ tsp.
  • Nutmeg Powder – 3 pinches
  • Cinnamon Powder – ¼ tsp.
  • Cardamom Powder – ¼ tsp.
  • Clove Powder – ¼ tsp.
  • Salt – ¼ tsp.
  • Warm Water – 1 cup
  • Vegetable Oil – ¾ cup

Note: You can also use Apple Cider Vinegar. You can skip using any dry fruits or nuts. Strawberry is required for icing, if you prefer plain cake, then skip strawberries and icing. You can use 2 pieces of clove and  1 ½ inch cinnamon stick to make their powder forms.

Eggless Fruit Cake Recipe Steps:

Pre-Preparation:

  • Overnight Soak the dry fruits:
    • Take all the fruits and nuts in a bowl.
    • Rinse and wash them properly.
    • Drain off the extra water.
    • Take a chopping board and finely chop all of them.
    • In a bowl, soak all these fruits and nuts in apple juice.
    • Wrap the bowl with plastic foil and keep in the fridge.
    • Bring them to room temperature before you use.
  • The Caramel:
    • Boil the water over a medium flame in futura hard anodized saucepan.
    • Heat the sugar and mix well to combine with water.
    • Turn the flame to low so that sugar does not dissolve.
    • Wait till the solution achieves its boiling point.
    • It will slowly raise bubbles, continue to stir.
    • After a while, sugar will start to crystallized and caramelize.
    • Continue the flame and keep cooking.
    • Turn off when the sugar has become brown in color.
    • Transfer the pan from the stove to the cooling rack.
    • Now, immediately add chilled water to the caramelized sugar.
    • While you mix the water, do not let the mixture splutter.
    • With the addition of the water, the caramelized solution will become hard. So again, place it on the low flame over the stove.
    • Stir and simmer continuously till it smoothens.
    • Turn off the flame and wait till the mixture cools now.
    • Now mix the oil with this caramelized sugar solution.
    • Now, add the lemon juice along with the vinegar.
    • Again mix and combine the ingredients.
  • Pre-heat oven to 180 degrees C or 350 degrees F for 20 minutes.
  • Strawberry Jam Topping:
    • Boil the water.
    • Heat the strawberry jam in the water for 2 minutes.
    • Add cornstarch to bind the mixture and make it thick.
    • Let the mixture cool and transfer it to a bowl.
  • Dry Mixture:
    • Sift the cake flour and all-purpose flour in a large mixing bowl.
    • Sieve the baking powder along with the baking soda in the same bowl.
    • Now add the spice powders like clove powder, nutmeg powder, cinnamon powder and the cardamom powder.
    • Mix the strained ingredients properly and also add salt as per the taste.
    • Set this bowl of sieved dry ingredients aside for some time for ingredients to rest.
  • Beat Yogurt:
    • Take the yogurt in a bowl.
    • Add the water to the yogurt and make it thin.
    • Whisk the yogurt with condensed milk and water mixture.
    • Get the consistency.
    • Drizzle the white vinegar over the mixture.
    • Squeeze in the lime juice and stir well.
    • Keep this bowl aside.
  • Cream Mixture:
    • You have a whip attachment, then fix it with another bowl of a stand mixture fitted.
    • Mix and beat the sugar with the melted butter.
    • The few drops of oil will make it even creamier.
    • Whip at a medium speed for 5 minutes and also scrape the sides.
    • Once done, keep this aside.

Note:  If you have frozen butter, then melt it on stove or microwave before using.  And add the butter instead of oil when the solution in warm. I would recommend you to use saffola oil.

Preparation:

  • Now take the bowl of the flour mixture add the mixture of soaked dry fruits with the apple juice.
  • Mix it with the light hands.
  • Pour in it the froth yogurt and melted butter-sugar cream mixture.
  • Now fold this mixture with the caramelized sugar to make it smooth batter.
  • Add the vanilla extract to this bowl of cake batter.
  • Fold the mixture evenly and make sure to not form lumps.
  • The cake batter must be smooth.
  • Stir the mixture well so that dry ingredients mix well with the wet ingredients.
  • Gradually mix these ingredients.
  • Mix well, fold the two sets of ingredients properly.
  • Now, take the baking cake pan and butter and grease the cake pan.
  • Pour the batter over the cake pan evenly.
  • Scrape the batter from the sides with a spatula and add to cake pan.
  • Tap of the sides of the cake pan, so that the air bubbles are released. Shake with strong and firm hands.
  • Sprinkle some powdered sugar on the top of the cake surface.
  • Bake the cake till the surface becomes fluffy and lightly brown. It should bounce back when pinched with a toothpick.
  • Remove the cake from the baking oven and keep over the wire rack for cooling.
  • Once the cake is cooled, with the help of a knife, trim the uneven top upper layer of the cake to make it look even.
  • Spread the strawberry icing evenly over the cake surface.

And the fabulous eggless fruit cake is ready to be attacked!
