Ingredients for Kanda Poha:

The Kanda Poha is prepared from the most basic Indian condiments. The finely chopped onions and the soft flattened rice are the two core ingredients which you require along with some spices.

For Kanda Poha:

  • Onions (finely chopped) – ½ cup
  • Flattened Rice (Thick Poha) – 2 cups
  • Raw Peanuts (Moongphali) – ¼ cup
  • Mustard Seeds (Rai) – ½ tsp.
  • Cumin Seeds (Jeera) – ½ tsp.
  • Curry Leaves (Kadi Patta) – 7 to 8 leaves
  • Green Chilli (finely chopped) – ¼ cup.
  • Turmeric Powder – ½ tsp.
  • Oil – 1 ½ tbsp.
  • Sugar – as required
  • Lemon Juice – as required
  • Salt – as per taste

Note: The flattened rice is also called as beaten rice. You can use either red or white flattened rice. You may require at least 1 tsp. of sugar to make the onion Poha. Always use thick poha to make this Kanda Poha recipe.

For Garnishing:

  • Nylon Sev – ¼ cup
  • Pomegranate Arils – ½ cup
  • Coriander Leaves – 2 tbsp.
  • Grated Coconut – ½ cup

Note: You can use any other ingredient for garnishing as well. You can add various roasted or fried nuts.

Method for Kanda Poha Recipe:

It is very easy to prepare the Onion Poha at home. Firstly, you need to make Poha soft, and then toss it in the spices. Finally, you can cook them with other veggies and condiments.

Pre-Preparation for Kanda Poha:

Clean and Wash Poha:

  • Take the 2 cups of flattened rice.
  • Transfer them to the colander or strainer.
  • Keep the running water and rinse the poha.
  • Wash the Poha with water till they soften.
  • You must rinse, as they should not be crispy.
  • Then take the flattened rice (poha) in a sieve.
  • Clean and wash in enough water
  • They should lose their crunchiness.
  • They should easily break between your fingers.
  • They should easily get crushed or mashed.
  • Once you washed and rinsed them, keep the bowl aside.

Note: If you are using Poha of hard quality, then you can soak them for a while in warm water. It is very important to strain the water completely from the poha. If there is any water left in Poha, then they would become sticky and clumpy.

Chop the Veggies:

  • Wash and rinse the onions.
  • Finely chop the onions.
  • Cut the onions into tiny pieces.
  • Rinse and clean coriander leaves.
  • Wash it thoroughly and strain.
  • Finely chop the coriander leaves.
  • Wash and clean the green chilies.
  • Deseed them and finely chop them.

Dry Roast Peanuts:

  • Take a pan and heat it on the low flame.
  • Now add peanuts and roast for 2 minutes.
  • Roast till they become brown and aromatic.

Steps to Make Kanda Poha:

  • Add 1 ½ oil in the nonstick pan.
  • Keep this pan on the stove.
  • Switch on the stove and heat oil in a pan.
  • Wait for the oil to heat over the medium flame.
  • Now, add mustard seeds and let them crackle.
  • Then add the cumin seeds and wait for it to splutter.
  • Now add curry leaves and saute for 5 seconds.
  • Also, add the chopped green chillies and stir them.
  • Now take the chopped onions and add in the pan.
  • Saute the onions until they become translucent.
  • Keep the flame medium and fry the onions.
  • It will take approximately 5 minutes for onions to become brown.
  • Till the time onions are cooking add spices in the poha.
  • Take the bowl of the soaked poha.
  • Sprinkle some salt and sugar as needed.
  • Squeeze in some lemon juice as required.
  • Properly mix all ingredients with the help of a spatula.
  • When the onions get cooked, add turmeric powder in it.
  • Also, add the roasted peanuts and stir them in the mixture.
  • Mix everything well and cook the mixture for 1 minute.
  • Now add the poha in which we have mixed the spices.
  • Transfer this spice mixed Poha to the pan of onions.
  • Stir properly so that the onions and poha gets mixed well.
  • Wait for the Poha to cook and turn yellow in colour.
  • Sprinkle some water on the poha.
  • Cover the pan with a lid and cook for 2 to 3 minutes.
  • Steam the Poha till they become soft over low flame.
  • Now, uncover the pan and cook for 1 minute.
  • Stir everything in a pan and cook for 1 more minute.
  • Keep stirring the Kanda Poha at regular intervals.
  • Avoid the Poha from sticking at the bottom of the pan.
  • Once cooked, then switch off the stove.
  • Let the Kanda Poha sit for some time.
  • Transfer the Kanda Poha from the pan to the plate.

And the delicious Kanda Poha is ready to eat!

Note: Always add Poha when everything else is cooked. The reason to add Poha in the last is because it does not get overcooked.
