Potato Roast Recipe

Ingredients Required for Potato Roast Recipe:

  • Baby Potatoes – 2 kg.
  • Olive Oil – ¼ cup
  • Black Pepper – 1 tsp.
  • Garlic – 6 cloves
  • Parsley – 2 tbsp.
  • Salt – as per taste

Note: Approximately use 6 to 7 small or medium sized potatoes. Buy olive oil at discounted price.

You can have roast potatoes plain with the sprinkle few spices or herbs as well you can have them with the spicy tempering. You can fry the spices like mustard seeds, cumin seeds along with spice powders such as turmeric powder and red chili powder. You may use curry leaves as well.

Steps for Making Potato Roast Recipe:

Pre- Preparation:

  • Rinse, Wash and Properly clean potatoes.
  • Then if you want peel off the skin of the potatoes or do not remove the skin.
  • Cut chop the potatoes into two equal halves if they are small sized or else into quarter if they are the medium size potatoes.
  • Keep the chopped potatoes aside in a mixing bowl.
  • Preheat microwave oven to 400 degrees F.

Note:  It would be preferable to cook if you cut potato in long slices. It is because when you cook them in oven, the thinner you chop the potatoes, the crispier would be their texture.

Preparation:

  • Take the bowl of the chopped potatoes and drizzle some oil over the potatoes.
  • Then add the minced garlic, sprinkle the black pepper and season the potatoes with pinch of salt.
  • Give a nice toss to this mixture of potatoes, so that potatoes gets well coated.
  • Each piece of the chopped potato should be evenly seasoned with these sprinkled spices and condiments.
  • Now, set these coated potatoes into sheet pan and spread out into single layer.
  • Grease the sheet pan with the oil or butter.
  • Keep this pan sheet with the potatoes in the oven.
  • Roast the potatoes in the oven for about 40 to 50 minutes.
  • Wait till the potatoes get brown in colour and attain the crispy texture.
  • Now flip all the potatoes so that it get properly roasted from all sides.
  • As the potatoes get roasted, remove the potatoes from the oven and keep the tray on the wired rack.
  • When the potatoes are roasted, season them with the freshly chopped parsley.
  • Give a gentle toss once again.
  • Check for the taste, sprinkle salt if you want.

Note: While you flip the potatoes, be careful not to burn yourself. As the potatoes must be really hot, you can use spatula to flip them.
