Spring Onion Soup Recipe

Ingredients for Spring Onion Soup Recipe:

  • Finely Chopped Spring Onion – 2 cups
  • Chopped Garlic Clove – 2 cloves
  • Potato – 1 medium size
  • Salt to taste
  • Oil/ Butter – 2 tbsp.
  • Black Pepper Powder – ½ tsp.
  • Water/ Vegetable Stock – 3 cups
  • Lemon Juice – 1 tsp. ( Optional )

Note: You can sprinkle 1 tsp. of oregano for the extra flavors. If you have soy sauce, then you can pour 1 tsp. of that as well. And for the extra zest, you may add 1 tsp. of curry powder.

If you are using oil for making soup, then normal Olive Oil will be a good option as it is generally used when you have to sauté or steam the food.

If the spring onions are not available, then you can replace them with the yellow onions. You can use saffola oil for cooking.

The Method for Spring Onion Soup Recipe:


  • Take the ½ bunch of spring onions and wash it under the fresh water tap. Rinse, clean and dry the spring onions. Now, chop both the upper and lower portion of the spring onion into small and fine small pieces. Keep both the parts separate in a bowl. Preserve the green chopped portion for the garnish.
  • Take the medium sized potato, wash and clean it. Peel off the skin and chop into the small pieces.

Note: You can either finely chop or roughly chop the spring onions and potatoes.


  • Heat oil or butter in a deep pan or a heavy thick bottomed pan on a medium flame.
  • When oil gets hot add sliced or chopped garlic. Let the chopped garlic cloves fry until they become golden brown.
  • Now add chopped spring onion and sauté them well. Let the ingredients mix well.
  • When the garlic and onions are cooked, and release the aroma, then add in the chopped pieces of potato.
  • Sauté the mixture continuously for approximately 1 minute.
  • Pour in some water or vegetable stock and again mix everything properly.
  • Change the heat flame to high so that soup comes to the boiling point.
  • Simmer until the spring onion and potatoes are cooked completely. Keep the flame low to avoid the overcooking.
  • As you the soup boiling, change the heat flame to the low.
  • When the soup is cooked, switch off the stove and let it cool.
  • Now transfer the cooked mixture of soup in a food processor or a mixture jar and blend till it becomes a smooth fine puree having the thick consistency.
  • Now pour the soup within the same pan and sprinkle salt and black pepper powder. Mix well to season the soup evenly.
  • Now once again, take the pureed form to the heated pan and bring it to the boil.
  • Squeeze some lemon juice over the soup.

And the delectable Spring onion soup is ready to gulp down!

Note: You can also make the soup in a pot. You can even use a hand blender to make the puree. If you find the consistency of the soup too thick, then pour approximately ½ cup of water and again simmer well. You can also skip the blending part if you want to have the soup in its raw form with some preferred bits of veggies.
