Vegetable Raita Recipe

Ingredients for Vegetable Raita Recipe:

  • Black Pepper Powder – as required
  • Capsicums – 1 small size
  • Carrots – 1 small size
  • Cucumber – 1 medium size
  • Onion – 1 medium size
  • Roasted Cumin Powder/ Bhuna Jeera Powder – 1 tsp.
  • Tomato – 1 medium size
  • Salt – as required
  • Yogurt – 1 cup
  • Coriander Leaves – 1 tbsp. (for garnishing)

Note: It is your choice whether you want to use dairy yogurt or to use vegan curd if you are a vegan. You can use also use Curd or Dahi.

To make your vegetable Raita look colorful use red, yellow, orange and green colored bell peppers.

It’s optional, but if cherry tomatoes are available then buy them as well.

The Method for Vegetable Raita Recipe:

Pre-Preparation:

  • Carrot: Wash the 1 medium sized or small sized carrot. Peel off its skin with the grater and then finely chop the carrot into small cubical pieces. You can also grate it into thin slices.
  • Bell Pepper: Rinse the all the different capsicum or bell peppers you are using. You can either slice chop them or cut into small pieces.
  • Cucumber: Clean the small or medium sized cucumber. Peel its skin and finely cut into equal sized pieces.
  • Tomato: Wash and cut the tomatoes into small cubes. If you want, then remove the inner portion of the tomatoes having seeds.
  • Onion: Properly rinse the onion and remove its skin. Cut into two equal halves and then finely chop into small pieces.

Note: Chop all these veggies into one bowl or into separate small bowls. You do not have to chop each of these vegetables into extremely small pieces.

Preparation:

  • Now, once you have rinsed all veggies and finely chopped all of the vegetables, keep them aside.
  • Then take a deep mixing bowl and add curd in it.
  • Whisk the curd until it gets a smooth consistency.
  • Transfer all the chopped veggies such as carrots, cucumber, bell peppers, tomatoes and onions to this bowl of whisked curd.
  • Also, sprinkle the spices like black pepper powder and the roasted cumin powder.
  • Finally, season the mixture with the pinch of salt.
  • After you have added everything, mix well.
  • Stir these ingredients so that mixed with the yogurt.
  • Check for the taste of the vegetable Raita.
  • If you feel the need or the requirement then add any spice powder or salt and check the taste once again.
  • Cover the bowl of vegetable Raita and keep it to cool in refrigerator.
  • After some time, take out from the fridge and give a gentle stir before serving.
