Red Chutney Recipe

Red Chutney Recipe Ingredients:

  • Fresh Red Chilies – 1 cup (8 to 10 chilies)
  • Ginger – ½ inch ginger
  • Garlic Cloves – 8 garlic cloves
  • Asafetida – a pinch
  • Lemon Juice – 1 ½ tsp.
  • Coriander Powder – ½ tbsp.
  • Cumin Powder – ½ tbsp.
  • Tamarind Paste – ¼ tbsp.
  • Olive Oil – 2 tbsp.
  • Water – 2 cups
  • Rock Salt – ¼ tsp.

Note: You can also use red cayenne pepper. If you want the deep and dark red color, then use the Kashmiri dry chilies. They give a good color as well as they are not too hot. But if you are unable to find them, then use any other red chilies which does not too strong heat.

You can also use 1 tbsp. of peanut oil instead of the olive oil.

Red Chutney Recipe Steps:

Pre-Preparation:

  • Peel off the garlic roughly chop the cloves.
  • Finely chop the ginger.
  • Wash the chilies and break them. Deseed the chilies and slice chop.
  • Soak these chopped red chilies in water for half an hour. Drain the extra water from them.

Note: Take caution while you chop the chilies.

Preparation:

  • In the blender or the grinder, add the chopped red chilies.
  • Then add the asafoetida, chopped garlic with the ginger with a pinch of salt.
  • Sprinkle the coriander powder and the cumin powder.
  • Squeeze the lemon juice in the blender.
  • Pour very little water in the blender and blend the ingredients till they become the smooth mixture.
  • The texture consistency has to be dark red and thick in nature.
  • Check the seasoning. Add the red chili powder if required.
  • The final mixture has to be a smooth puree.
  • Now heat the oil in the pan and wait till it crackles.
  • Now add the red chili puree to the heated oil along with tamarind paste.
  • Saute the smooth puree on a low flame.
  • When cooked, turn off the flame, add lime juice and stir well.
  • Pour the chutney into the bowl and serve.
