  • Strawberries – 4 cups
  • Lime Juice – 1 tbsp.
  • Grated Lemon Zest – 2 tsp.
  • Vanilla Extract – 4 ½ tbsp.
  • Granulated Sugar – 9 ½ tbsp.
  • Cake Flour – 2 cups
  • Baking Powder – 2 tsp.
  • Mascarpone Cheese – ½ cup
  • Heavy Whipped Cream – 3 ½ cups
  • Vegetable Oil – ½ cup
  • Eggs – 1 pack (6 eggs)
  • Unsalted Butter – 2 tbsp.
  • Water – ¼ cup
  • Salt – ¼ tsp.

Note: If you have only lemons at home, then prepare lemon zest at home. You can also prepare lime juice at home or buy from the store. Use Saffola oil for cooking.

Strawberry Cream Cake Recipe Steps:

Pre-Preparation:

  • Berries: Rinse and hull the strawberries. Taking a large non-reactive mixing bowl. Combine the strawberries with the 1 ½ tsp vanilla extract. Add 2 tbsp of sugar and 1 tsp of lemon zest. Squeeze 1 tbsp of lemon juice and toss to coat the strawberries evenly. Cover the bowl with the plastic paper and let the mixture soften for approximately 20 minutes.
  • Strain the berries and reserve the syrup in a jar.
  • Cake Batter: Sift the 2 cups of cake flour in a large mixing bowl. Sieve the 2 tsp of baking powder in the same bowl. Mix the strained ingredients properly and also add 1/4 tsp of salt or as required per the taste. Set this bowl aside for some time for ingredients to rest.
  • Whipped Cream: You have a whip attachment, then fix it with another bowl of a stand mixture fitted. Break the eggs and add the egg yolk with the 1/2 cup of vegetable oil. Also mix 1 tsp of lemon zest, 2 tsp of vanilla extract, 1.5 cups of sugar and 1/4 cup of water. Whip at a medium speed and also scrape the sides. Do this for 5-7 minutes till the mixture achieve light texture and becomes airy. Continuously whip the mixture till it becomes smooth. Once done, keep this aside.   • Egg White: Take another clean bowl, whip eggs whites to medium peak. Add some amount of sugar and start whipping once again.
  • Filling: Again in the bowl having the whisk attached, mix the 1/2 cup of mascarpone cheese and 1/2 cup of heavy cream. Whip for 2 minutes till achieves stiff and heavy peaks. Refrigerate the filling before using.
  • Frosting: Combine 1 tbsp of vanilla extract with 3 cups of heavy cream in the chilled bowl. Add 6 tbsp of sugar and whip for 2 minutes.

Note: Use whipping machine or you may whip with the spoon or whisker. You may also add dry ingredients while whipping.

If do not have a beater to whip the cream then you can use ready-made store bough whipped cream. But do not add cheese in that cream.

Preparation:

  • Take the egg white mixture and cake batter. With the help of rubber spatula, fold the egg and the cake batter. Gently fold until evenly incorporated. Combine the two separate mixtures evenly.
  • Butter and grease the cake pan.
  • Transfer the final batter between the greased cake pans.
  • Bake the cakes in the oven until the surface becomes fluffy. It should bounce back when pinched with a toothpick.
  • Remove the cake from the baking oven and keep the tray of cake pans over the wire rack and allow them to cool completely.
  • Once the cake is cooled, with the help of a knife, trim the uneven top upper layer of the cake to make it look even.
  • Place the cake pan on the clean surface and apply the reserved strawberry syrup on the cut side of the first and second cake.
  • Spread the filling over the bottom layer of the cake evenly carefully. Also trim the layer as and when needed to make it even.
  • Arrange strawberries upright and stem end down. Fill any remaining spaces with the berries.
  • Place the cake second layer over the first layer made of filling and strawberries. Secure the first layer and cut its side down.
  • Again, spread the frosting in a thin layer over the top and the sides. Wait for 15 minutes till the frosting has completely settled over the cake.
  • Spread the remaining filling and frosting all over the cake where you feel is needed.
  • Let the cake settle in the refrigerator for the half-hour before you serve.
